Welcome to the Shoun RyuGin Website.
As a sister restaurant of RyuGin Japan, Shoun RyuGin strives to create a memorable dining experience based on the Tokyo restaurant but one that is unique and features the richness of Taiwan’s local ingredients.
Chef de cuisine Ryohei Hieda embodies founder Chef Seiji Yamamoto’s philosophy, communicating and coordinating closely with local farmers and fishermen to explore Taiwan’s distinctive ingredients and seasons. We utilize the rich abundance that Taiwan boasts to offer a traditional yet unique Kaiseki-inspired cuisine.
The origin of our name "RyuGin" comes from the words of "Zen", and is derived from "龍吟雲起(RyuGin-Unki)".
During Chef Seiji Yamamoto’s training, he came across a book of “Zen” and within it, a hidden meaning of "龍吟雲起(RyuGin-Unki)"...
"When a heroic person makes a decision and takes action, his comrades will mutually resonate and gather there..."
That lesson moved his heart, and made him decide on the name of his restaurant.
So, we will guide the inside of RyuGin.
